Our farm consists of three vineyards; two are situated in the D.O.C. area of Castelli Romani and one is located in the D.O.C. area of Aprilia. We cultivate our grapes using biologic methods therefore we use no synthetic chemical treatments or fertilizers. As alternatives we use copper (a maximum of 6 kg per hectare per year) and sulphur as well as the natural pest control agent, bacillus thuringiensis, only after verifying the presence of parasite eggs on the grapes. Our vines are espaliered and pruned using the Guyot style and the vineyards are planted to a density of 3,700 plants per ha. Varieties grown are Merlot, Cabernet Sauvignon and Syrah; all graft-bases are SO4. We irrigate our vineyards only in case of real need and yields are limited thanks to the absence of any type of forcing.
